  • 50 ml RumChata
  • 3 fresh raspberries

Instructions: Add three fresh raspberries into a cocktail tin and mash them with a muddler. Pour in the white rum, gourmet raspberry syrup, RumChata, and pina colada mix.  Toss in four ice cubes, secure the lid and shake vigorously for 30-seconds.   • 170 ml Cold Earl Grey tea
  • 36 ml good quality gin
  • 36 ml honey simple syrup (5 cups water, 1 cup honey in saucepan. Simmer until honey is dissolved)
  • 7 ml fresh-squeezed lemon juice
  • 2 sprigs lavender

Instructions: Brew 4 cups Earl Grey tea. This will give you enough to make a few cocktails. Store in the refrigerator to keep cold. Make a batch of honey simple syrup to store in the fridge as well. 5 cups water, 1 cup honey. Bring to a simmer until honey has dissolved. Then cool in the fridge. Add all of the above ingredients into a cocktail shaker, with 2 sprigs lavender and ice. Shake several times. Then strain the cocktail into a glass over one large ice cube. Garnish with lavender.

  • 2 tablespoons agave nectar
  • 1/4 cup grand marnier
  • 1/4 cup brandy
  • 1 orange, halved and then sliced
  • 1 lime, sliced
  • 1 pear, sliced
  • 1/2 cup pomegranate seeds
  • 2 sticks of cinnamon
  • 1 bottle of dry red wine (Cabernet Sauvignon)
  • 3/4 cup ginger ale

Instructions: To a large pitcher add agave nectar, grand marnier, brandy, orange, lime, pear, pomegranate seeds, cinnamon sticks. Stir to combine. Pour in the entire bottle of red wine. Cover and place in refrigerator for 1-2 hours. (the longer it sits the better it will taste) Right before you are about to serve add the ginger ale to the sangria mixture. Pour over ice or serve chilled.

Matching Cocktail: Pornstar Martini

  • 2 ripe passion fruit, about 50ml (2fl oz)
  • 50 ml lime juice
  • 100 ml vanilla vodka
  • 50ml Passoa (passion fruit liqueur)
  • 25ml sugar syrup
  • Ice, handful
  • champagne, to serve
  • Extra passion fruit, for decoration

Instructions: Halve the passion fruit, scoop the seeds out and place in a sieve over a bowl. Use the back of a spoon and press repeatedly on the seeds until all the juice has been extracted. Discard the pips. Place a handful of ice into a cocktail shaker. Pour the fresh passion fruit puree into the cocktail shaker, along with the lime juice, vanilla vodka, Passoa and sugar syrup. Close the cocktail shaker and shake for 30 seconds. Divide the mixture between two martini glasses, then top up each glass with champagne. Decorate each martini glass with half a passion fruit and serve with a shot glass of champagne on the side.
